Have you discovered the instant pot yet? I got one for Christmas, and I am hooked. I'm kind of a last-minute cook, so the instant pot is ideal for me. We have a few special diets at our house, and I've been happy to find tons of gluten free instant pot recipes. Now that we've added dairy free to the mix, cooking dinner has gotten a little trickier! I can't wait to try these amazing ideas. Dinner has gotten so much more exciting since I got an instant pot. All of the sudden I'm trying new recipes and getting out of our five-or-six-meal rut. Finally!

I have a fairly big family, and I like to have leftovers, so I purchased the 8-quart instant pot on Black Friday. (It's also a rice cooker, saute pan, steamer, slow cooker and yogurt maker.) I absolutely love it. So far, we've used it to make roasts, some of the recipes I'll be linking, stews, bean soups, baked potatoes, ribs, and spaghetti squash. Yum.

If you are trying to decide which size it right for you, here are the drawbacks to the large size: It it very tall, so it only fits on the very top shelf or under the bottom shelf of my pantry. If you don't have a pantry, you might find it difficult to store unless you have really large cupboards. Because it is so big, when you fill it pretty full, it takes a long time to come to full pressure. That might be true of any size instant pot, but I kinda think it's the size of the pot. I prefer my big pot, though. I like being able to cook a lot of food at once.

I found the best prices for these pots on Amazon, but if you want the 6-qt, you can sometimes find a great deal at Kohl's when you combine their ad with coupons.
